Valençay

Valencay is a goat cheese that is produced in the Valencay region – in the center of France, the Loire region. In addition to cheese, Valencay is known for its stately castle and wine production.

The outside of the cheese is light gray to bluish gray. It is rubbed with charcoal. It is milky on the nose with a slight goat odor that increases over time. Valencay is eaten fresh – after 11 days of ripening. The cheese is cut ‘pieces of cake’ style.

Interesting:

According to legend, the shape of the cheese was originally a complete pyramid. When Napoleon came to see Prince Tallyrand on a visit to Valencay Castle, he had the cheese decapitated so that Napoleon would not be reminded of his defeat in Egypt. Incidentally, Tallyrand was the first Prime Minister of France (1815) and a major negotiator in the Congress of Vienna

Bread
Baguette is perfect. Gladly, of course, ‘bien cuit’ with a crispy crust.

Eat
When ripe, at room temperature with bread. Should be taken out of the refrigerator 30-45 minutes before eating.

Drink
Of course, a Valencay that comes from the same region would be ideal. It is available in red, rose and white. Sauvignon Blanc grapes are fermented exclusively in white. A good alternative would be the Sauvignon Blanc from the Pugl winery, the 2020 state winner in the Styrian Wine Trophy.
